Denmark-based company, Caviart presented their healthy, sustainable alternatives to fish roe. The concepts can be used for decoration in plant-based foods, or where fish roe cannot be used and offer a shelf stable delicacy that taste and looks like caviar. According to Poul Jensen, the products “do not contain fish oil, they have a pleasant taste, is cholesterol free, has low fat and salt and healthy micronutrients,” he tells FoodIngredientsFirst. The Caviart concepts are also fish-friendly and good for the environment since less than 5 percent of the seaweed growth is harvested.
