IFT First 2024: Hydrosome Labs targets F&B commercialization

Hydrosome Labs, a firm that puts ultrafine bubbles into water to boost nutritional intake, showcased it platform technology at IFT First 2024 in Chicago, US. Bob Jacobs, president for Consumer Products, outlines how the patented process works, the nutritional and sensory benefits for various applications and the company’s next steps.

So tell us about your company and what you're displaying today.

Yeah, so we are a, ingredient company if you will.

We have a technology that puts ultrafine.

Bubbles into water.

Those bubbles act as carriers of gasses and nutrients into cells.

So there's a, it's a platform technology.

There's multiple applications for this industry that we're very excited about.

And can you describe briefly how the paint the process works?

Yeah, so we're using a process called hydrodynamic cavitation.

To make these bubbles, the bubbles that we make are very, very small, on the order of 50 nanometers to 100 nanometers.

Those bubbles aren't like the bubbles you are used to in your Coke or your sparkling water.

They're not buoyant, so they stay in solution for long periods of time.

Attract nutrients to their surface and then deliver those to cells.

OK.

And what could this technology mean for consumers and their enjoyment of beverages?

Absolutely.

So there's a lot of different applications on the B2B side.

There's applications for fermentation, improving fermentation processes, but in beverages we've seen improvement in the delivery of functional ingredients.

So take a beverage with collagen in it and we can deliver that collagen.

Effectively to human cells.

There's also some sensory aspects to this, so the bubbles with different gasses in them taste different and deliver different sensory benefits.

So a lot of different places this technology can go.

OK.

And what's your next steps as a company?

So our next steps are really to expand into these two areas.

We're already commercialized in the beauty care space.

Now we're going to commercialize in food and beverage.

We're looking for.

Partners again we're a small startup, so we enjoy working with companies to take this technology into fermentation, into beverage formulation, you know, spaces like that.

As a final question, what has been your experience of the show this year?

The show has been tremendous.

This is our first time here.

We're in the startup zone.

There's been a lot of interest, you know, here in this technology, and it's been fascinating seeing a lot of the.

The new innovations, especially as it relates to kind of technologies and non-ingredient, you know, applications or or or technologies at the show, we've been very excited to see that.
