French dairy company Epi Ingredients unveiled its latest yogurt powder at FiE 2023, utilizing the company’s 20 years of know-how in fermented milk powders. The extra sour flavor is shelf stable and 100% derived from natural acidity, evoking the experience of fresh yogurt for the health-conscious consumer. Anne-Laure Legrand, product manager, and Camille Houdoin, R&D project manager at Epi Ingredients, explain key applications, such as product coatings and fillings.

Epi Ingredients is here presenting an extra sour yogurt powder.

So what was the inspiration behind developing this sour yogurt powder?

Currently our company is specialized in the development of fermented powder, and we also have the know-how and the expertise for developing yogurt powder for over 20 years.

And we find that there are more than 800 products that were launched in Europa in the last 3 years with yogurt powder.

So it proves that it's very trendy on the market, and the extra soy yogurt powder allows you to have a natural acidity and the freshness of a fresh yogurt, but with no need for any refrigeration because of the powder formula.

All right, and what are the primary applications in food, as Ala just said, fermented products and especially yogurt powders are very trendy and can be found in lots of new applications every year.

So it is the same for extra sour yogurt powder as it will be found mainly in snacks, confectionery, and drinks, but also in sauces, marinades, ice cream, or even savory products.

Always in order to advise our clients the best we can, our R&D team developed several recipes using this extra sour yogurt powder, and you can test and see right here at the stand, for example, in the field of bakery, we created a coating application for biscuits and also another application of a filling.
