Lallemand debuts fermentation-derived vanillin for clean label foods

Lallemand Bio-Ingredients has developed a vanillin aroma ingredient for various food products, including bakery, dairy, confectionery, chocolate, and cereals. The natural alternative to synthetic vanillin enhances mouthfeel, boosts specific flavor notes, and provides an intense vanilla taste.
The “groundbreaking” Hevani ingredient is produced through a precision fermentation process, which Lallemand has access to as part of its 2024 acquisition of biotechnology firm Evolva. The process leverages yeast-based technology to produce high-purity natural ingredients year-round, while preserving natural resources.
Hevani precision fermentation technology ensures a consistent profile and quality, according to the company. With a purity of 98%, it contains no contaminants, such as pesticides or heavy metals.

“Evolva’s deep know-how in precision fermentation and R&D capabilities present an ideal platform from which to expand our product offering,” says Lars Asferg, president of Lallemand Bio-Ingredients.
Targeting “natural” product demands
Hevani does not require GMO labeling and is approved for use in flavors in the EU and the US. The ingredient has a “natural” status in the EU and the US, enabling the development of “best-in-class products that resonate with consumer expectations for natural ingredients.”

Innova Market Insights data shows there was a 79% CAGR in F&B launches featuring vanilla globally between 2023 and 2025. The top positionings in this period were “Vegetarian,” followed by “Halal” and “Gluten-free.”

In addition to food applications, Lallemand describes Hevani as an “excellent fragrance ingredient” for cosmetics, such as perfumes, lipsticks, and balms. It is approved for use in fragrances and cosmetics in the EU and the US, and is not restricted by the International Fragrance Association.
