Jools is known for its innovatively packaged soft drinks with pearls. This product has now been phased out with the company looking to expand its reach in other areas involving pearl technology, which is based on combining calcium chloride and sodium alginate. As CEO Nic Gorini explains: “We launched our Jools drinks in 2014, as the only bottled drinks with bubbles inside. So we have taken the spherification technology and put them into a drink.” “What we realized is that the bigger challenge was to actually use the technology to a larger scale. We are democratizing the technology and creating an expertise around pearls and bubbles of all types."
