NPEW 2024 live: Strong, well-balanced cocoa powder range with less bitterness and sugar

Fatemeh Khadem, senior technical services manager at Cargill Cocoa & Chocolate, dives into the newly-launched cocoa powders that help customers reduce sugar and bitterness. Some also pair well with oat and almonds for alternative dairy chocolate beverages.

I'm here at Expo West 2024 with Cargo with Fatimah Kadem, who is the company's senior technical services manager.

And can you tell us what kind of chocolaty innovations Cargill is focusing on at this year's Natural Products Expo West?

Yes, this year we are here with our newly launched cocoa powders.

Brings a solution for our customer in the reduction of sugar in the beverage application in a simple way.

We also have another series of cocoa powders that is pairing very with oat and almonds, chocolate beverages that are dairy alternatives.

OK, and , can you explain a bit how these innovations help begin permissible, bring permissible indulgence to life?

Yes.

So definitely everybody in the industry is a little bit more focused on reducing the sugar, where we are still holding the pink as being the sensory of the finished product.

So with these new sweetie ranges of the cocoa powder, because our scientists and all the food engineers have developed a new technology to reduce the sweetness, the bitterness of the cocoa powder in this, product, we feel that there is less need for adding solutions as a sugar to.

Balance the overall flavor portfolio.

So these are a little bit less bitter cocoa powders with a strong, balanced chocolate notes that can help in reduction of the sugars.

Very interesting.

And can you explain a little bit also what is driving innovation of cargo right now?

Oh yes, absolutely.

So we are heavily focused on.

Partnership with our customers.

That's where we really understand where is our customers and their consumers' needs, and what side, what, what sort of solution we can, we can bring to the table.

And we are also heavily investing on the insights, consumer insights and what is the.

Trend.

That's how we bring solutions and the innovation that starts with our customers.

Interesting.

And can you give some examples of how cargo anticipates and responds to new trends or demands from customers?

What we are still seeing is definitely growing.

Premium, offerings in the market, as as, as I said, the sugar reduction is still in the mind of everybody.

Meanwhile, everybody is looking for the products that they are aware where it comes from and is it responsibly sourced and , sustainability of the products as as being good for you and being good for the planet.

And that's where Cargill is focusing to come up with the new solutions for ours.
