Avebe Finds Margarine Application for Innovative Starch

6 Apr 2010 --- Avebe has found potential for its Etenia ingredient in bakery margarines. Etenia from Avebe is promoted as the world´s first thermo-reversible stabilizing and texturising starch. It enables the production and processing of healthy bakery margarines with reduced fat and/or lower saturated fatty acids (SAFA). The baking performance of the resulting products is excellent.
The company notes that consumers of baked goods are becoming more aware of the negative aspects of fat and SAFA. Labeling of fat and SAFA content of fat is now obligatory. In some countries a “fat tax” is being discussed in politics. As a result, retailers and bakeries are looking for solutions to provide healthier baked goods.
With Etenia, manufacturers of butter or margarine are now able to produce healthier bakery margarines with lower fat and up to 20-50% reduced SAFA content. The margarines are suitable for processing on existing machinery and the resulting baked goods meet the demands of palatability and taste.
