An Award Winning Pulse Solution

Ingredion, in partnership with AGT Foods, received an IFT17 Food Expo Innovation Award for their clean taste pulse ingredients at this year’s IFT Awards Celebration in Las Vegas, Nevada. Judge comments on the clean-taste pulses included, “Flavor of plant proteins is a major hurdle to acceptance; finding a physical treatment to ameliorate the flavor would be welcome,” and “Innovative; problem-solving; clean label; vegan protein.” 
Yadu Dar Director, Strategic Business Development and Alliance Management at Ingredion  spoke to FoodIngredientsFirst at IFT 17.

The IFT Food Expo in Las Vegas, and I'm here with Yadu Dar from Ingredient, and Ingredient just won the Innovation Award last night for their clean taste pulse ingredients in a joint venture with ATT.

Yadu, can you tell me a bit about this product and how it meets today's trends?

Absolutely.

So we're really excited to have won this award for this breakthrough product that ADT Foods and Ingredients and Ingredient Incorporated developed together.

It was launched here and the key benefit that we from this product is pulses or pulse-based ingredients are really, really healthy products.

Consumers love them.

Product developers love them.

They have a lot of benefits with protein and micronutrients.

However, there is a slight issue with a lot of them that they have some flavor that consumers may not like the beanie flavors, green flavors, earthy flavors, a little bit of bitterness.

Our breakthrough technology actually helps.

Preserve all the nutritional qualities of these products, but takes out some of that flavor that allows us that allows food product developers and consumers to take in more of these products but without the disadvantages of the products with the higher flavor.

What type of pulses is it based on?

So it's based, it can be done with literally any type of pulse product.

Today we have products based on chickpea, yellow pea.

Fava bean as as lentils that we have launched, but we could do this with pretty much any type of pulse product.

Is this available commercially already.

It has, so the products that I just described to you are available for sale commercially in the US as as in most of the rest of the world, and we are working on other areas and products which would be available for use in the near future.

Using pulses in new products, it seems to be quite a big trend.

Do you expect this to continue?

So from where I sit, I see this being a I'm not sure if it's too early to use the phrase mega trend, but everywhere that you see in all segments of the food industry, consumers, product developers, they are looking for healthy ingredients.

They are looking for ingredients that give nutritional benefits, that give the health benefits.

Of what the pulses have to offer, pulses are also extremely sustainable, so they have a lot of benefits to the environment and to the planet because they are a good way of using sustainable agricultural practices, farming, and that's another big benefit from pulses.
