New On Trend Fruit Concepts

Richard Horsley and Claus Christiansen of Paradise Fruits discuss new on trend fruit concepts. The company offers freeze-dried fruits, which are "lightweight, nutritious and delicious." They are 100% pure and retain many of the natural nutritional, flavor and colour characteristics from their fresh form.

This is Rob Wires at the ISM in Cologne and I'm here with Richard Horsley and Klaus Christian Christiansen from Paradise Fruits and Paradise Fruits are highlighting a number of new concepts here for using fruit ingredients in sweet applications.

And Richard, can you tell me a bit about the trend towards using fruit in new applications and where some opportunities are?

Yes, I think more and more people are looking for healthier ways to enhance the products.

Fruit is obviously central to that.

And the beauty about our business and our products is that we have a range of items that can that can help enhance products and that's in the various formats, different textures, different tastes.

Part of our showcase, this particular exhibition is based around super fruits.

And the beauty of our process is that we can blend different ingredients together.

Mainly without sugars, and because of the process and the concentration factor that we have in some of our products, you can get up to 7 times its own weight in fruit.

And so it really adds a health benefit, but paramount to that is still the taste and the texture that our products can deliver.

Are there some particular fruits that you see really on the rise right now?

Last year it was interesting some of the work we looked at said that lemon was one of the key flavors, but that's across all food in general.

I think people still are interested.

In the whole super fruits concepts.

So your pomegranates, your blueberries, your acai.

There isn't one in particular that seems to be head and shoulders above the rest.

However, we're offering consumers the chance to blend some of these together.

So acai, pomegranate combinations in some of the different formats that we do have available, and it seems to be working.

OK, Claus, can you tell me a little bit about some of the technologies that you have and what some of the concepts are here?

Maybe you can describe some of the ideas.

We have to Points in our production.

So we have two steps, one being a freeze dried variety where we offer both the pure fruits, but also fruits on a carrier basis.

So we offer within the super fruit categories, we offer acai mixed with a natural carrier which in this case would be apple puree, but also we see the tendency of the pure fruit freeze dried being a carrier or an ingredients which is growing in importance and also in popularity.

Especially within the confectionery business where this is a way of safety getting your product outstanding out of the glass, plus we can use these products in various applications, fat filling being a filling of pure fruits in a chocolate tablet.

So basically the freeze drying way of freeze drying offers 100% fruit, which is key for many of our customers today.

What are some of the concepts that you have?

What we have is, obviously we have the, the pure fruits, like we have here are strawberry.

So we basically offer these size, this size would be perfect for, chocolate tablets.

Smaller sizes like a 1 to 3 millimeter strawberry in this case, would be good for fat fillings.

On top of this, we also offer our products in a pure powder form, which can be used for coating purposes as we see down here, in an in-product formulation.

But also, if we take a look at our products up here on a different carrier, which would be a yogurt base with a fruit, here in this case strawberry, passion fruit, we can incorporate that to get a texture, a crunchy texture.

What's this concept you have over here?

Over here we have a pure fruit smoothie bite, so we can do a wet mixture of various fruits.

In this case it's With puree with banana and passion fruit in it, so it's sort of to pick up on the smoothie bite trend which is currently going.

We have pure snack item, which is mainly targeting a target for the snack.

And what about some of the other new developments or things that are in the pipeline?

We have, we have, as I mentioned.

Super fruits, acai, goji, but also we have, new mixtures.

So basically products where we use a wet base, we can tailor these tastes according to the customer recipe.

So yogurt is a carrier, yeah.

Basically there are very few limits to these products, and we can offer these also granulations, which will be the suitor for various applications.
