Clean label is not new for the France-based caramel supplier Nigay. It has been working for more than 20 years to meet clean label demands through its burnt sugar, says Yves Palmier, International Sales Executive at Nigay during Fi Europe 2019 in Paris. Demand for premium, clean label caramels continues to occupy a wide range of applications, from ice cream and chocolate to soup and organic pet food. Palmier also notes that the company recently opened a second production plant in Northern France to meet the demand for caramel and caramel coloring.
