Rousselot is highlighting a new silicone mold gelatin solution called SiMoGel. “Classically, gelatin gummies have always been made in starch molds, but now with the growing trend of nutraceuticals where you put APIs or vitamins in your gummies, you don’t want these vitamins or APIs getting into your starch and being recycled over and over in your process, so you want to use silicon molds” says Jeff Daelman. If silicon molds are to be used with gelatin, then a gelatin that sets quickly is needed. That used to be a limiting factor, but Rousselot has recorded setting times of between 15 and 30 minutes with its new solution in trials.
