Symrise compiles top trends for beverages, savory and sweet food

15 May 2018 --- Symrise has surveyed a wide-ranging group of chefs, pastry specialists and mixologists to compile its 2018+ Trends Report which includes the top 10 trends of the beverage, savory, and sweet food categories.

And one example of one trend the producer of flavors and fragrances discovered is Audacious Herbs, which, according to Symrise, can upgrade some foods and beverages by introducing global flavors into American favorites.

The 2018+ Symrise Top Trends for North America  – which is now available from Symrise – highlights ten of the most popular flavor trends in the food and beverage industry and will be integrated into the Symrise Global TrendScope report which provides a thorough overview of both global and local flavor trends.

For the 2018 report, Symrise says that it took a unique approach by using multiple phases and a variety of resources. Symrise examined the beverage, sweet and savory categories and looked for commonalities between the three. 

The team examined intriguing flavors and ingredients that they saw bubbling up on restaurant menus through menu research and by visiting various places around the US. 

In addition, they went back to previous yearly trend reports from 2016 and 2017 as well as the Winter and Summer Fancy Food shows, to create a “genealogy” of trends from all of this research. 

The final step was to pick the most interesting trends to focus on and dig deeper into these with a survey that was run in conjunction with StarChefs. Working with this organization allowed Symrise to talk to hundreds of chefs, pastry chefs and mixologists. The analysis of the survey results, along with the genealogy, led to the 2018+ Top Ten Trends list.

This closely follows another recent Symrise in-depth study of fermented ingredients and how they are making a comeback, especially amongst Millennial consumers. As consumers become more concerned about the processing their foods endure to make it to the table, techniques perceived as more natural help to provide reassurance. As a result, we see the revival of traditional processes, as well as the creation of new ones, which deliver health and taste benefits through more natural means.
