Soymilk and beverages containing soy have been gaining consumer attention and growing steadily. Now that the U.S. Food and Drug Administration has accepted the health benefits of consuming 25 grams of soy per day, consumers are finding soy-based beverages to be an easy and delicious way to add soy to their diets.
For beverage formulators, however, developing a soy beverage that remains smooth and stable over the shelf life can be quite challenging. KELCOGEL HS-B gellan gum is specially designed for suspending and stabilizing the soy protein as well as other ingredients, such as cocoa for flavoring, and fortifying ingredients like calcium and fiber. KELCOGEL HS-B gellan gum functions at low use levels to impart minimal mouthfeel without adversely impacting flavor.
KELCOGEL HS-B gellan gum disperses well without lumping, hydrates easily and is heat stable, making it compatible with standard UHT and HTST equipment.
