18 Jan 2016 --- In order to meet the needs of the beverage industry, acacia gum supplier Alland & Robert has set up its latest reference “Instant Soluble Acacia gum 500I”, dedicated to the stabilization of complex oil emulsions in aqueous solutions, in particular with citrus fruits, paprika and beta-carotene, ingredients frequently used in the production of fruit sodas, sports drinks and other beverages.
Alland & Robert works very closely with the biggest groups of the food & drinks industry, and the demand for a product like Instant Soluble Gum Acacia 500I was high, especially for the manufacturing of sodas in new and mature markets. Thorough market research, including sales analysis and customer consulting, ensure consistency between the market demand and this new product.
The scientific approach of the research and development activities Alland & Robert has lead allowed to identify and to confirm the key indicators measuring the emulsifying power of the acacia gum. The researchers found that the surface tension and the gum’s emulsifying capacity can, inter alia, depend on the originating
country and on the soil composition.
FoodIngredientsFirst spoke with Violaine Fauvarque, marketing manager for Alland & Robert: “The lab has its own expert team working on new development projects. It took about one year for the Alland & Robert team to create Instant Soluble Gum Acacia 500I. In the laboratory, the team realized oil-in-water emulsions based on flavor recipes (for instance with orange essential oils) using a semi-industrial high pressure homogenizer to be as close as possible to customer’s conditions. The team ran tests to study long-term stability, and accelerated the ageing process of the emulsion. The study of the evolution of the size and the distribution of droplets by laser granulometry allows A&R to determine the performance of gum acacia and to select the best batches that will be dedicated to most demanding flavors and beverages industries.”
Fauvarque tells FoodIngredientsFirst how it differs to similar acacia gum: “Instant Soluble Gum Acacia 500 I is more efficient than usual acacia gum to stabilize emulsions. Depending on the ration oil to water and the nature of oil, it is possible to incorporate around 50% of the dosage of regular acacia gum, and obtain the same emulsifying properties. Instant Soluble Gum Acacia 500I can also be used for the stabilization of difficult oil in water emulsions (for instance with citrus, oleoresins or ß-carotene).”
Frédéric Alland, CEO of Alland & Robert comments: “An incorrect emulsion has a significant impact on the quality of the final product because it provokes an alteration of taste, of texture and of sensations for the consumer. Instant Soluble Gum Acacia 500I is a high safety food ingredient, that meets all clean label standards. “This vegetal hydrocolloid contains no gluten, is allergen free and GMO free. At Alland & Robert, Acacia gum is harvested solely from wild trees located in the southern Sahel, in Africa. Acacia gum is a sustainable, natural and vegetal ingredient organic by nature,” adds Fauvarque.
Beyond the benefits of the “Instant Soluble Acacia gum 500i” for the success of emulsions, the acacia gum presents interesting nutritional properties. 100% natural as it arises from acacia exudates, it is painless, colorless, tasteless and soluble in water. Rich in fibers, it however presents a week calorific power. Guaranteed without allergen, free of NGOs and pesticides, it is organic, halal and kosher certified, and perfectly suits with a use in food products including for vegetarian and vegan diets.
