The barrel-aged syrups are made by pouring syrup into recently emptied bourbon, rye, or rum barrels and letting it age for as long as a year. The maple absorbs the essence of the spirit without the alcohol, resulting in the perfect marriage of complementary flavors. The smoked syrup is made through a proprietary method using pecan wood, which they have found gives just the right hint of smoke without being overpowering.
