Dairy Solutions for Throughout the Day

Highlighting exciting and novel ways to include dairy proteins and ingredients throughout the entire day was the focus this year for the U.S. Dairy Export Council (USDEC) at this year’s IFT. USDEC provided new concepts, research and insights to help formulators develop exciting products for breakfast, snacking and mealtime to best meet consumer trends including weight management, healthy aging, sodium reduction and simple ingredient labels.

This is Rob Wires at the IFT in Chicago and I'm here with KJ Burrington from the US Dairy Export Council, and they're highlighting a number of new concepts here for dairy, for dairy proteins for different times of the day.

Kim, can you tell me a little about the trend towards, adding protein to the to the diet and what some of the concepts are that you have here?

Yes, I'd be happy to.

Over the years we have focused a lot on protein and the nice thing about what we're showing you today is there's a lot of research that has backed up the benefits of using protein throughout the day in the diet, and many of us believe that we get enough protein throughout the day, but.

Most of us don't, and there's some benefits of adding protein to the diet for even the general population.

How big is this deficiency or how, how far below what's required are we getting?

The typical daily value that's given to people is about 50 g of protein a day is the requirement, but it's really a minimum requirement for people to prevent, you know, problems with.

Diseases and things like that.

So there are benefits to adding to that, and that's what the research has focused on.

So, what I'm going to show you today are many different prototypes that have added protein to them so that you can spread your protein out throughout the day.

OK.

And, and the benefits of doing that is mainly to help you maintain your muscle mass and to keep your muscle healthy.

So, for most.

Most of us, most of us are not elite athletes.

We don't work out extensively every day, but there are some health benefits to maintaining our muscle as we age.

So what are you showing here then?

So we're going to start out with breakfast.

We're showing a cafe yogurt frappe.

This is a drinkable yogurt that is coffee.

It has coffee added to it, and it has the same level of caffeine as one cup of coffee.

So this product has a little bit of added whey protein to it to boost the protein up to 10 g per 8 ounce serving, which is a little higher than a lot of drinkable yogurts, and it also has a very nice coffee flavor, so you can get your coffee and your protein, as as all the other benefits of milk, like the minerals, for instance, to start out your day.

OK.

And as a snack concept, what do you have here?

We also have a snack concept, and many people now are, are snacking more.

They're eating a lot of mini meals, often is what we call them.

So, snacking is an important occasion to possibly add protein to the diet to get a little more nutrient density.

So what we have here.

Is a soft pretzel with added whey protein in the pretzel, and this also would have 10 g of protein per serving.

We're also showing a cheese dip to accompany the pretzel, and the cheese dip is a reduced sodium cheese dip.

So the complement or the binding of both the protein and the reduced sodium gives you a nice healthy alternative for any time of the day.

OK, and you have a dumpling here which is more towards, as an evening meal.

Yes, this also could be an evening meal or a mini meal.

Asian foods are very popular in the US, and the dumplings are one of those that we're seeing more of on menu items and in restaurants.

Typically, many dumplings contain meat, but there are dumplings that don't contain meat that are nice options for vegetarian populations.

So typically there wouldn't be any protein in the dumpling at all, but we've added a milk.

Protein concentrate to the dough of the dumpling, so it also will boost the protein up to about 10 g per 140 g serving.

The dumpling also has an Asian dipping sauce that accompanies it, and this is a soy sauce based product, but we've added whey permeate to the soy sauce to help reduce the sodium, also to contribute to a more healthy diet.

OK.

And finally, you have a beverage concept that you have here.

Yes, and lastly, we have what we are calling our protini, and this is kind of a fun adult drink.

This doesn't contain any alcohol, but it could.

So this contains a whey protein islet, also 10 g of protein per 8 ounce serving.

So it's a nice refreshing way to have a little bit of protein in an adult type drink that tastes a little bit like a martini.
