Ohly brings “braised chicken flavor” to plant-based segment bursting with umami

17 Jan 2022 --- Ohly has developed a yeast-based braised chicken flavored modifier to cater to vegetarian consumers’ cravings for comfort food while encouraging flexitarians to broaden their plant-based diet.

Ohly Sav-R-Meat PBD dissolves effortlessly in water and can be applied to processed meats, meat alternatives, sauces, seasonings and snacks. In addition to masking off-tastes it is effective when working with low-sodium meat applications due to its naturally high salt enhancing umami, the company reports. 

Chicken flavor associated with good memories
Chicken is regarded as one of the favorite comfort foods, which has risen to new-found popularity during the COVID-19 pandemic as more people redesign their home-style cooking.

Chicken soup, crispy chicken nuggets or slow cooked meatballs come to mind as being associated with fond memories, often involving family and friends. 

Ohly uses high-protein baker’s yeast, to which moderate heat is applied. It mimics succulent dark-meat chicken taste for savory applications.Ohly mimics dark meat chicken flavor.

An internal expert evaluation was conducted and an independent group of flavor scientists were commissioned to research the key characteristics of Ohly Sav-R-Meat PBD. The evaluations show it delivers a higher umami impact in comparison with the main yeast-based thermal process flavorings currently on the market. 

It delivers on “rich chicken taste”, long-lasting umami mouthfeel and eliminates the need to add other premium flavor modifiers.

Food application testing approved
The product has been tested in a variety of food applications which show that it effectively masks off-tastes and meets succulence requirements for plant-based meat substitutes. 

It enhances fatty chicken flavors in gravies and broths and prevents loss of flavor in frozen processed meats. The product is allergen and GMO-free. It is also halal and kosher certified. 

In December 2021, Lallemand Bio-Ingredients unveiled a new range of yeast-based flavors in the plant-based protein segment called Savor-Lyfe P series replicating ham-style pork, roasted cuts and bacon-like smoked meat, as showcased live from Food Ingredients Europe (FiE) in Frankfurt, Germany.
