12/07/07 At this year’s IFT, Vitiva of Slovenia will present a natural solution for keeping chocolate and chocolate products fresh for an extended period of time. Inolens 12 is an all-natural, allergen-free ingredient offered as a beneficial processing aid to protect chocolate and other confectionery products, such as praline or toffee sauces, with no change in taste or aroma.
Oxidation and rancidity developments have been recognized as leading causes of deterioration in confectionery products during storage. The two critical factors of chocolate that determine their susceptibility to oxidation are the fat content and storage temperature. Dark chocolate holds a rich source of natural antioxidants that reduce the deterioration process, but milk chocolate, white chocolate, toffee sauce and other high-fat confectionary products are more prone to rancidity.

Inolens 12 is the natural alternative for the synthetic antioxidants that are commonly used as processing aids in chocolates and confectionery products. It is a ready-to-use formulation, easily blending with complementary ingredients in the product such as cocoa powder, sugar, powdered milk and various fats. Confectionery products with nut pieces are also highly prone to oxidation and Inolens 12 protects these ingredients equally well.
