Givaudan Revolutionizes High Protein Dairy, With "ABC" Solutions
10 Sep 2015 --- Givaudan, the world’s leading flavor and fragrance company, has created a suite of flavor, taste and texture solutions for the fast-growing high protein dairy products market in Western Europe. Givaudan’s solutions address the issues of Authenticity, Balance and Consistency (ABC) in high protein dairy as identified by consumer research.
Thomas Ullram, Category Manager Dairy of Givaudan, explains: “In the UK, 86% of consumers believe protein is important to stay healthy. Consumers are looking to dairy to provide protein, with almost half of consumers in the UK, Italy and Spain saying they would like to see more high protein yoghurts.” He adds: “Consumers recognise and understand the role of protein in a balanced diet. High protein products are now no longer purely the preserve of health and fitness products – they are mainstream.”
Formulating dairy products high in protein has challenges in terms of flavor, texture and shelf life. To meet these challenges Givaudan has created its suite of solutions to help food manufacturers create the high protein products that consumers want:
A stands for Authenticity: Consumers enjoy a natural, real taste of the fruit, which is subtle, pure and clean.
B stands for Balance: Givaudan’s suite of solutions can ensure a neutral taste, mask unpreferable off-notes, and as such improve shelf life.
C stands for Consistency: It is about the texture of the dairy products, which need to be creamy and spoonable or smooth and drinkable.
Givaudan has also created a range of flavors including berries, exotic fruits, coffee and vanilla specifically designed to deliver optimum performance in high protein yoghurt and dairy drinks. Alongside TasteSolutions Masking and TasteSolutions Mouthfeel ingredients, these flavors create balance and the right consistency for the perfect taste and texture whether dairy or plant proteins are used.
Ullram told FoodIngredientsFirst: “The new range of flavor solutions combine up to 15 ingredients that ensure consumers get the best flavor with no off-notes and with the best, silky mouthfeel, almost eliminating the dry mouth that is common with high protein dairy products.”
He continued: “The ABC suite is totally natural and so has a clean label. They maintain the high protein, which is usually categorised as 10% protein, compared with the usual 3% and in terms of marketing, they allow food producers to target new groups and to fill those gaps in the market where high protein dairy could easily fit.”
