Givaudan Develops ‘Authentic Flavor Profile’ Via TasteSolutions Richness

The new technology, created to benefit the food manufacturing industry, includes a complex blend of taste and aroma components which work together to provide an authentic flavor profile for consumers, offering a multi-layering of flavors beyond the traditional ingredients used in products such as snacks and ready meals.
"TasteSolutions Richness is a new approach to flavour creation which can be used in any convenience food or snack application where chicken and beef flavours are used," Laith Wahbi, Global Product Manager Savoury Taste, told FoodIngredientsFirst. "The difference from traditional flavours is that TasteSolutions Richness can recreate the effects of multi-step and slow-cooking in a commercial process; delivering Taste complexity and authenticity. Using TasteSolutions Richness in a beef bouillon or a stew for example can recreate the taste-effects of multi-step cooking processes such as browning the meat, roasting, slow-cooking and reduction. This richness and taste complexity delivers an added benefit; by introducing the depth of taste normally only experienced in a home-cooked dish, taste enhancers and high salt levels are not needed."
TasteSolutions Richness is a taste innovation that brings the time dimension back to prepared foods - recreating the taste complexity from traditional cooking techniques achieved through slow cooking and multi-step cooking processes into a new flavor approach. The Richness flavors allow for the creation of prepared foods that retain the authenticity of home-cooked dishes while meeting today’s demand for convenience. The offering applies principally to chicken and beef and will be expanded to include other key areas such as cheese, dairy and vegetables.

Wahbi explains that the concept is easy to use. "It is available for use in both liquid and dry flavours," he says. "It is a Taste technology that is integrated into the customer’s flavour recreating the taste-effects of the home-cooked dish in a commercially prepared food or to enable the accurate translation of complex culinary dishes into snacks.
"We have focused on Chicken and Beef initially as these are particularly significant for many of our customers but TasteSolutions Richness could be applicable for any food where there is taste complexity. We are already looking at cheese in culinary dishes but if you think of the huge flavour and taste difference between raw and cooked vegetables and between the different cooking methods, grilling, boiling, slow roasting or stir frying, you can see there is great potential for further investigation."
The timing of this launch appropriately coincides with Givaudan’s 2014 ChefsCouncil taking place this week in New York City as TasteSolutions Richness all started with inspiration and discovery from previous ChefsCouncil events.
