Givaudan and AkzoNobel Salt Specialties Partner on Sodium Reduction Solution for Processed Meat
12 Apr 2013 --- In a unique collaboration, the world's leading vacuum salt producer, AkzoNobel Salt Specialties, has joined forces with Givaudan, the world’s leading flavor and fragrance company, to address the challenges of sodium reduction for processed meat.
The resulting one-to-one salt replacer, Suprasel OneGrain TS-M100, looks, tastes, flows, blends and dissolves in the same way as regular salt.
Using AkzoNobel’s OneGrain technology the new product combines salt, potassium chloride and flavor in each single grain, ensuring the same processing and storage properties as regular salt. Universally applicable across a broad range of processed meat products the product can help manufacturers reduce sodium by up to 40%.
“This product has been developed as a universal solution for European processed meat applications. Processed meat is a significant contributor to salt intake in Europe, contributing 10% to 20% of the total salt intake in many EU countries, but only a few tailor-made sodium reduction solutions were available. Using its TasteSolutions flavor technology, Givaudan has specifically designed a flavour to restore the eating qualities of low sodium processed meat,” Matthijs Bults, Business Development Manager at OneGrain told FoodIngredientsFirst. “This enhances the taste of the meat application and restores the salt profile, whilst enabling a sodium reduction of up to 40%. First commercial applications are possible rom a wide range of meat products, as the product is universally applicable in processed meat,” he added.

AkzoNobel Salt Specialties worked in collaboration with Givaudan to incorporate the industry leading TasteSolutions flavor technology in Suprasel OneGrain TS-M100. The flavor has been specifically designed to restore the salt profile and eating qualities for reduced-sodium processed meat.

Suprasel OneGrain TS-M100 has been developed to meet European requirements and is launched in this region initially, whilst development for other regions is currently in planning.
“The new product has been developed to meet European regulatory requirements and is launched in this region initially. The ingredients can be labelled as sodium chloride (NaCl), potassium chloride (KCl) and flavor,” says Bults.
AkzoNobel Salt Specialties and Givaudan see this as the first of a new generation of sodium reduction systems, as the combination of technologies is applicable to many other areas of the food industry where taste, functionality and handling are key considerations when reducing sodium levels.
“AkzoNobel has strong experience in sodium reduction and offers differentiating functional benefits with its OneGrain technology. We partnered with a flavor company to offer differentiating taste benefits for processed meat in addition to this. The new product does that by restoring the salt profile and eating qualities of sodium reduced processed meat,” says Bults.
