Galactic Extends Clean Labeling Range With Buffered Vinegar Based Solutions
06 Oct 2014 --- To meet the growing demand of customers, Galactic has announced the recent extension of its clean labelling solutions for meat, poultry, seafood, sauces, dressings and ready-to-eat preparations.
Consumers are paying more and more attention to what’s written on the labels of the food products and it becomes a major element in their purchasing decision, according to the company.
By associating natural ingredients with fresh and healthy diet, the clean labeling trend is supported by the overall desire to eat healthier and the food industry has to adapt to this change.
To help its customer tackle this new challenge, Galactic is extending its existing range of label-friendly solutions, Galimax Flavor K-65 and KV-65, with three new references based on buffered vinegars: Galimax Flavor V-50, VK-50 and V-100 powder.
"Flavor targets food processors who want to eliminate e-numbers on their label without compromising food safety and sensory profile of the finished product," a company spokesperson told FoodIngredientsFirst. "For example, several trials performed by our R&D team have demonstrated that Flavor is perfectly adapted to erduce the level of sodium and has the ability to control listeria in frankfurters over a period of 12 weeks, depending on the storage conditions."
All these products are made by fermentation of sugars and have mild tastes that do not impact the sensory profile of finished products and even enhance it in many cases, hence the name “Flavor™”. They also display excellent antimicrobial properties and as such help guaranteeing food safety.
Moreover, Galimax Flavor V-50 and VK-50 bring another healthy benefit by being perfectly suited for low sodium recipes.
