FrieslandCampina DMV to Introduce New Solution for Low Fat Dairy
Hiprotal 60MP is a modified whey protein concentrate which is an ideal fat substitute. With this innovative ingredient, low fat and reduced fat products still have excellent taste and creamy mouth feel.
24 Sep 2009 --- FrieslandCampina DMV will be present three new ingredients at the FiE in Frankfurt. Also planned are two most pertinent and interesting lectures by experts in the field. The products FrieslandCampina DMV wants to spotlight are Textrion PROGEL 800, Vivinal GOS and Hiprotal 60MP. Each product will also be the subject of a presentation placing it in a wider context and talking about development.
Hiprotal 60MP is a modified whey protein concentrate which is an ideal fat substitute. With this innovative ingredient, low fat and reduced fat products still have excellent taste and creamy mouth feel. It is used in yoghurt, milk-based drinks and processed cheeses. Hiprotal 60MP is certified as halal. The lecture on this new development will be given by Hans Zijlstra, FrieslandCampina’s Manager R&D Application Development, on November 17 at the Seminar Theatre in Hall 9. It will be entitled ‘The novel WPC Hiprotal 60MP’. According to DMV, the new ingredient meets two key demands; tackling obesity and the quest for authenticity.
Obesity is a growing concern throughout the world. Nowadays, consumers have become aware of the importance of a balanced nutrition as one of the most important factors for maintaining a healthy weight. Consumers are therefore increasingly buying low-fat or light foods instead of regular ones. Also dairy proteins suppress food intake more than fats and carbohydrates.
Another development is the quest of consumers to authentic taste and appearance of food. An important function of milk and whey proteins is that they give structure to and improve the mouthfeel of products. To formulate tasteful and creamy products, (milk) fat is often used in addition to these proteins. The replacement or reduction of (milk) fat generally has drawbacks when used in these products, such as less flavour.
Advantages of Hiprotal 60 MP
• Taste comparable to full-fat dairy products
• Healthier proposition
• No E-number and no additives
• Cost-in-use
Segments
• Yoghurt
A comparison demonstrates that Hiprotal 60 MP reduces fat content without notably altering the product’s sensory profile. In higher fat yoghurts, Hiprotal 60 MP delivers the necessary viscosity, creamy taste and creamy mouthfeel. A 3%-fat yoghurt enriched with Hiprotal 60 MP tastes like a 6%-fat one.
• Milk-based drinks
Hiprotal 60 MP improves the body and mouthfeel of low and 0%-fat (fermented) milk-based drinks. Furthermore, it helps the drinkability.
• Processed cheese
Hiprotal 60 MP benefits the production of tasteful light cheeses by reducing their fat content and increased water retention. In addition, the application in cheeses also results in a reduction of costs.
Also on display at FiE will be Textrion PROGEL 800 and Vivinal GOS. Textrion PROGEL 800 is a high gelling whey protein concentrate which is designed to build texture in food and dairy products. It has excellent water binding properties and its texturising and gelling characteristics are impressive. Textrion PROGEL is suitable for vegetarians, is halal certified and can be made kosher on request.
Vivinal GOS [in the Friesland Foods Domo portfolio before the Friesland/Campina merger] is a pre-biotic ingredient, rich in galacto-oligosaccharide. It comes in the form of a bifidogenic syrup and improves calcium absorption and digestive health. Vivinal GOS has important immunity-enhancing properties and is suitable for dairy and dairy drinks, beverages and various sports and weight management applications. The lecture presenting Vivinal GOS will be given by Ellen Ertmann, FrieslandCampina’s researcher in Nutrition, and is entitled ‘Delivering on natural functionality – helping your body help itself’. It will be held be on Tuesday November 17 in the Conference Room ‘Esprit’, Hall 9.
