Dr. Martin Schweizer to Present on Burcon's Canola & Soy Proteins
Dr. Schweizer's presentation on Burcon's revolutionary acid soluble proteins follows the announcement in October 2008 that Burcon's canola proteins, Puratein and Supertein were GRAS affirmed in the United States and our subsequent announcement in November 2008 of Burcon's new CLARISOY soy protein isolate.
22/05/09 Burcon NutraScience Corporation announces that Dr. Martin Schweizer, Manager Technical Development, will present at Bridge2Food's "Food Proteins Course 2009" taking place in Anaheim, California, USA on June 9 - 11, 2009. International speakers from a large number of globally recognized food and nutrition companies will address trends and developments in protein ingredients.
CLARISOY is 100% soluble and completely transparent in acidic solutions, enabling applications in ready to drink beverages ranging down to pH 2.5 and lower. CLARISOY lacks the traditional 'beany' taste of soy, giving beverages a cleaner flavour. The solubility and transparency of CLARISOY allows for its use in a wide variety of beverages where traditional soy isolates are not appropriate. It is also heat stable, permitting hot-fill applications. Burcon's CLARISOY shows great promise for use in a variety of healthy and great tasting beverage and food applications.
Powdered CLARISOY is easily dispersed and dissolved, 100% soluble and completely transparent in solutions. This will enable CLARISOY to be formulated as a protein source in a variety of powdered beverage mixes or be easily added by the consumer by simply stirring it into their favourite beverage.
Puratein is a canola protein isolate with functional properties that include emulsification, gel formation, thickening, formation of heat-stable foams, and water- and ingredient binding. Applications for Puratein include dressings, meat substitutes, baked goods and protein bars, among many others.
Supertein is a canola protein isolate with functional properties including excellent solubility, the ability to form transparent solutions and foaming. Applications for Supertein include beverages, confectionery, aerated desserts, and protein bars, among many others.
Nutritionally, Burcon's canola proteins are equally exciting with unique amino acid profiles. Supertein is uniquely rich in sulfur amino acids and particularly rich in cysteine. The typical cysteine content of Burcon's Supertein is nearly double that of whey protein, which is recognized for its high cysteine content.
