Discretion Brewing Partners with Local Non-Profit for Barrel-Aged Sour Series
14 Dec 2015 --- With the release of Woodland Critters No. 1, Discretion Brewing aims to venture into new territory in search of profound and unexpected flavors.
The Woodland Critters series will focus on barrel-aged sour ales. For the first release in this adventurous new series Discretion utilized a mixed culture of pediococcus, lactobacillus, brettanomyces, and saccharomyces. After filling a used whiskey barrel with the base beer, the brewers added these “critters” and allowed them to feast on the sugars remaining in the beer while finding a new home and sanctuary in the cracks and crevices inside the wooden staves. According to Brewmaster Michael Demers, “The result is a beer of marvelous complexity, featuring wine-like acidity with notes of plum, toffee, vanilla and dates. Hints of the barrel’s previous life dedicated to whiskey linger in the background.”
This very special beer has a limited production of less than 350 bottles.
Discretion has partnered with the Land Trust of Santa Cruz County for the Woodland Critters series, No. 2 and No. 3 of which are in barrels now. Discretion is donating $2.00 for every bottle produced to help them continue their crucial work of preserving their local lands and critters.
