DeutscheBack Makes Sweet Baking Simple
05 May 2015 --- DeutscheBack GmbH & Co.has launched a new TopSweet series for deep-fried products and choux pastries. The purpose of the premixes is to simplify the choice of raw materials for the production of pastry goods and make it possible to create a diversity of high-quality sweet products. TopSweet Berliner 12.5% for doughnuts and TopSweet Brandmassenmix for choux pastry ensure that sweet specialities taste fresher and more succulent than ever.
TopSweet Brandmassenmix is a universal ready-mixed flour with standardized whole egg powder for making choux pastries, éclairs and crullers. Only water has to be added, which makes handling very simple and reliable. All the other ingredients are already contained in the mix. Another possible application is succulent quark balls, easily made from 40% premix with the addition of flour, sugar, quark, whole egg, vegetable oil and water. Like TopSweet Berliner 12.5%, this integrated compound contains no added flavouring at all, which means that the pastry goods can be flavoured just as the baker wishes. For products in which no hardened fats or oils are to be used there is the variant TopSweet Brandmassenmix HVOF as an alternative in keeping with this trend.
