Dawn Foods Creates Novel Ready to Use Fruit Fillings
05 Mar 2014 --- As part of its major American Bakery Campaign 2014, Dawn Foods has extended its range of fillings and toppings with a selection of competitively priced ready to use fruit fillings featuring real whole fruit, developed especially for the UK and Irish bakery markets.
Jacqui Passmore, Dawn Food’s marketing manager, told FoodIngredientsFirst that the continued growth in coffee culture means that sales of indulgent sweet treats in both retail bakery and away from home are growing. “Familiar, homely products reminiscent of childhood such as hand-held fruit pies, fruit filled cakes, premium sweet pastries and desserts are particularly popular and we are seeing increased demand for ingredients for this type of finished product from plant bakers,” she explained.
“As well as the multi-sensory experience that combining a rich base with fruit can give – a fruity or citrus filling can break up the flaky texture of pastry or cut through a creamy sponge for example - bakery and patisserie products containing real fruit are perceived as fresher, healthier options too,” Passmore said. “The new Dawn Foods’ Fruit Fillings range now gives bakers the opportunity to tap into the popularity of fruit with consumers but to ensure that the price of the finished product remains competitive.”

With increasing consumer demand for clean, fresh flavours and real fruit pieces in pies, pastries and gateaux, Dawn’s new fillings are available in seven ‘on trend’ flavours: blueberry, raspberry, black cherry, red cherry, lemon, strawberry and Fruits of the Forest – a classic combination of strawberries, blackberries, raspberries, red currants and blackcurrants.
These new bake-stable fillings are convenient, easy and ready to use in pie fillings such as all American Cherry Pie, layering or depositing into cakes, topping cheesecakes with blueberry or Fruits of Forest for example or filling sweet pastries and Danish pastries. Dawn has developed the fruit fillings to complement the taste profiles of its existing range of cake, muffin and donut mixes.
Made using quality nut-free and vegetarian-friendly ingredients, Dawn’s new fruit fillings contain 38% fruit so making them a particularly attractive option for bakers wishing to keep finished product prices competitive but retaining the taste and quality of real whole fruit.
Dawn’s new fillings are available in 5.5kg re-sealable and stackable buckets with a shelf life of nine months. To maximise usability, all the fillings are freeze-stable too.
