WILD Launches Antioxidant Blend for Chocolate Products
WILD is now offering chocolate manufacturers a natural, powdered basic pack with a high, standardized polyphenol content. The antioxidant blend contains plant extracts from green and white tea as well as green rooibos and grape seeds.
27 Jul 2009 Chocolate products rich in natural antioxidants are growing in popularity because they combine pleasure with functional benefits. Until now, cocoa beans of special quality and high in secondary lant compounds were needed to allow advertising of the antioxidative effect of the chocolate products. WILD enables manufacturers to offer antioxidant-rich products thanks to its antioxidant blend, even when the natural plant compounds of the cocoa beans do not quite reach the desired level.
WILD is now offering chocolate manufacturers a natural, powdered basic pack with a high, standardized polyphenol content. The antioxidant blend contains plant extracts from green and white tea as well as green rooibos and grape seeds. Polyphenols exist in plants as natural colorants, flavors or tannins, and are said to absorb free radicals in the human body. The high and standardized polyphenol content of these extracts has a naturally antioxidative effect.
WILD’s antioxidant blend can be used in a wide range of products, whether for chocolate bars or pralines, with or without fruit filling, and the already substantial polyphenol content in these products can be boosted even higher with WILD’s antioxidant powder blend. In addition to the basic pack, manufacturers can benefit from other natural WILD ingredients like fruit powder or natural colorings and flavors that enhance the nutritional value of their products.
The standardized antioxidant powder blend for chocolate products from WILD can be combined with a wide variety of fruits, such as orange-passion fruit or cranberry. Both blend especially well with the taste of dark chocolate.
The ingredient blend in powder form can be added both to the chocolate mass or the filling, and it is possible to get up to 700 milligrams of polyphenols in 100 grams of a filled chocolate bar. In such a concept, 200 milligrams can be added to the chocolate mass and 500 milligrams can be added to a fruity cream filling. The antioxidant powder blend from WILD has no impact on the taste of the final product and offers another major advantage – because the powder dissolves completely, it can even be added after the conching process.
