Van Hees Develops New Technology for Meat Sauce and Goulash
30 Sep 2013 --- Van Hees has developed a new technology to enable foodservice operators to optimise their routine in preparing meat sauces and goulash for their catering, snack bar or takeaway – “a technology that will save you time and help you plan your product flavour as well as your inventory and budget.”
The new Vantasia Schlemmer-Quick sauce system for cold-steeping preparation eliminates the usual pre-cooking step in meat and separate spicing, “allowing you to fill the sauce and mince meat or goulash well-mixed into sterile casings.” This prevents losses and keeps all the flavour where it should be. It is possible to produce enough “ahead of time for your bolognese sauce or goulash to be ready to serve on demand.”
“You no longer have to pre-cook your meat for bolognese sauce or goulash – production is amazingly simple: just add cold water into the chopper and let the Vantasia Schlemmer-Quick Bolognese oGAF dissolve completely at mixing speed. Then add freshly minced pork to the cold mixture and blend until the ingredients are evenly mixed, and leave the mass to steep for around a quarter of an hour for the Vantasia Schlemmer-Quick to absorb the water. Then fill the mix into a suitable container, such as sausage casing with your filling machine and leave the sauce in a boiler or steamer to simmer for around an hour. Both the weight and flavour stay in your product – unlike more conventional production, which loses weight and flavour while frying. You also benefit by being able to produce larger amounts ahead of time and store the filled casings in your cold store until you need them,” the company claims.
The routine is much the same for making goulash – “just add your fresh goulash meat to the mixture of water and Vantasia Schlemmer-Quick Gulasch oGAF, mix until you have an even blend, fill the goulash into casings after steeping, heat it for around an hour, and store cool.”
The Vantasia Schlemmer-Quick Bolognese oGAF sauce system has a typically Mediterranean bolognese flavour and a rich red colour; spicy tomato flavour and selected herbs and spices give the product added flavour and visual appeal. Vantasia Schlemmer-Quick Gulasch oGAF has a rich red colour and typical goulash seasoning with a fruity, fresh tang of paprika. Both products are free of glutamates and declarable allergens.
