Jalapeno Treattarome 9816 is a companion product to Habanero Treattarome 9815, but like the natural fruit, the new Jalapeno Treattarome carries a greener, bell pepper-like note, differentiating it from the hot, tangy habanero chilli.
100% natural, this FTNF (from the named food) distillate delivers the complex and unique flavour of jalapeno. Treattarome 9816 is wholly distilled from top-grade jalapeno peppers, which are processed and distilled in a short, rapid production process which preserves the fresh character of the pepper. Using specialised technology, this new Treattarome is collected without the need for extended heat processing. The resulting clear to pale yellow extract is miscible with water, alcohol and propylene glycol. It enables the development and manufacturing of products with a reliable degree of heat in the resulting taste. Successful applications include salsa and pepper sauces where control of the capsaicin heat level is important. Furthermore, with no added preservatives or antioxidants, Treattarome 9816 carries a clean label to increase consumer appeal.
Taking its name from Xalapa in Veracruz state, Mexico, the jalapeno pepper is generally used in hot sauces. At a dose of 0.1%, Treattarome 9816 imparts a strong fresh, green and earthy flavour with warm paprika notes, but without the intense heat. At a dose of less than 0.01%, it delivers fresh, green peppery undertones.
