TIC Gums Offers New Carrageenan System
In addition to milk and non-milk drinks, Colloid 750 can be used in products like instant pudding, fruit and chocolate syrup, bakery products and refrigerated omelets. From a functional standpoint, this carrageenan system can be used at low usage levels.
21/11/06 TIC Gums has introduced a new carrageenan-based system--TIC Pretested. Colloid 750. A cold water soluble product, Colloid 750 is most useful in applications where the traditional benefits of carrageenan are desired but heat is not available. This system reacts with milk protein to create the creamy viscosity and smooth mouthfeel expected in puddings and similar applications.
Colloid 750 is a versatile gum with many potential uses. "Colloid 750 works very nicely in dairy-based and ready-to-drink meal replacement beverages," notes Maureen Akins, food scientist for TIC Gums, adding that demand likely will continue, given current product and marketplace trends. "More consumers are looking for fast, alternative meals, so food formulators are looking for new and innovative products to fit the bill. Colloid 750 will provide much-needed mouthfeel and viscosity to products that have been formulated for a more health conscious consumer."
In addition to milk and non-milk drinks, Colloid 750 can be used in products like instant pudding, fruit and chocolate syrup, bakery products and refrigerated omelets. From a functional standpoint, this carrageenan system can be used at low usage levels, such as 0.1 to 0.3% for milkshakes and 0.8 to 1.2% for instant puddings.
