Spain's Largest Wine Group Buys Pulsair Systems Tank Air Mixers

17/09/07 Codorniu wine group, (http://www.codorniugroup.com) Spain's largest with eleven wineries, has purchased 20-tank compressed air mixing systems from Pulsair Systems (http://www.pulsair.com/winemake.html) for red wine cap maceration.
Each system is expandable and can handle multiple tanks. The initial 20-tank systems will operate fermenters ranging in size from 50 to 75 kiloliters (13,209 to 19,813 gallons.)
Pulsair's patented air bubble mixing system uses carefully controlled compressed air pulses to provide a gentle but highly effective way to break up and disperse the wine cap that is formed in the fermentation process. Large bubbles break through the layer of wine solids that form at the top and distribute them evenly throughout the wine without shearing or breaking the solids. This results in a smoother tasting wine with better flavor according to winemakers currently using Pulsair.

When programmed, the systems will mix the assigned tank for the predetermined number of minutes and then rest for the programmed number of hours. Batches and recipes can be named and stored for each fermentation recipe. Pulse times can be offset so all the tanks operating from the system will not start at the same time, thereby reducing the instantaneous demand for electricity and compressed air or nitrogen.
By automatically rolling a red wine cap on a pre-programmed cycle during fermentation, the operator can control several batches simultaneously with minimal time involvement, reduced labor and no late night supervision.
