Nammex, a North American supplier of Certified Organic Functional Mushroom Extracts, will present its innovations at SupplySide Global in Las Vegas, US (October 29–30). The company will showcase its expertise for brands seeking more market share in the rapidly growing mushroom category.
To support the inclusion of mushrooms in functional beverages and foods, Nammex commissioned a tool to help product formulators, R&D teams, and brand managers create functional mushroom beverages.
The report shares the findings of a sensory analysis of 16 mushroom extract samples from Nammex, evaluated for their flavor, aroma, bitterness, and overall appeal, focusing on culinary and formulation-relevant attributes. “Elevating Sensory Expectations: A Technical Panel Review of Nammex Organic Mushroom Extracts” was released in August and is available to F&B formulators.
Nammex will also explain the recently published open-access, peer-reviewed research article, Comparative Study of Chaga (Inonotus obliquus) Dietary Supplements Using Complementary Analytical Techniques, in the International Journal of Molecular Sciences.
Nammex experts will elaborate on the differences between mycelium-fermented grain and real mushrooms.
Fungi extracts
The company will highlight its line of organic mushroom extracts and its unique optimized mushrooms. One of these is ErgoGold, made from Ergothioneine (Ergo), a food-derived antioxidant found in high amounts in certain fungi.

The antioxidant was only offered as a nutraceutical sourced from synthetic or purified yeast-derived isolates, until Nammex developed ErgoGold.
ErgoGold is an extract powder from Golden Oyster mushrooms (Pleurotus citrinopileatus). It delivers a therapeutic amount of Ergo plus a full complement of other therapeutic compounds, including beta-glucans, ergosterol, insoluble and soluble fiber, and secondary metabolites. Nammex’s ErgoGold contains consistent and verified levels of Ergothioneine in a whole food mushroom matrix.
Nammex has also developed MycoD2, a whole-food source of vitamin D derived from mushrooms. It utilizes pulsed UV light technology to convert the fungal sterol, ergosterol, into high amounts of vitamin D2. The ingredient is suited for consumers seeking a whole-food and vegan source that delivers the daily RDA of vitamin D with as little as 60 mg.
