The seminar is a VendorWorks presentation, titled “Natural Colorants – A Technical and Regulatory Examination” and will feature Lauro examining the functional attributes of natural colorants. Lauro will compare and contrast the unique qualities of anthocyanins (such as grape juice, elderberry juice, purple carrot juice, red cabbage juice, purple sweet potato juice, and red radish juice), with carotenoids (such as annatto, beta-carotene, lycopene, paprika, and saffron), betalains (beet juice), and other natural colorants (including caramel color, chlorophyll, carmine / cochineal, titanium dioxide, and turmeric); some or all of which are sensitive to light, heat, and pH, or interact with other ingredients such as ascorbic acid / vitamin C. The examination will conclude with a discussion of the current regulatory status of natural colorants when used in food, beverage, and “nutraceutical” products including label declarations, organic certification versus compliance, EU regulations, and kosher and halal requirements.
colorMaker will display natural color blends in both liquid and powdered form for use in food or beverage products at SupplySide West Booth #14071. colorMaker will also display naturally colored cake and cookie icings, as well as naturally colored hard candies.
