Food tech start-up Happy Plant Protein has raised €1.8 million (US$1.9 million) to commercialize its manufacturing process, which helps produce plant ingredients from legumes, such as peas, lentils and cereals, with a 70-80% protein content. Jari Karlsson, CEO and co-founder of the company, sits down with Food Ingredients First to discuss the patented technology and its potential to leverage underutilized crops to meet global demand for sustainably produced protein.
