DuPont Nutrition & Health to Present New Fungi Control Solution for Cheese

12 Mar 2014 --- DuPont Nutrition & Health will highlight its newest solution for controlling yeast and mold spoilage, HOLDBAC YM-XPK, at this year’s International Cheese Technology Expo, along with other solutions for helping cheese manufacturers improve productivity while maintaining quality and optimizing costs.

Visitors to the DuPont booth can learn more about HOLDBAC YM-XPK, a patent-pending protective culture designed for optimal performance in controlling yeast and mold in typical cheese matrices. The solution addresses a key opportunity for manufacturers to deliver a product with longer shelf life, in particular pre-packed portion, sliced and grated cheeses.
