DSM Launches Cultures for Pasta Filata Cheeses

26/09/08 DELVO-TEC TS-80 is a new range of thermophilic cultures from DSM Food Specialties.
Developed specifically for Pasta Filata cheese, these cultures deliver a number of important benefits. They produce more cheese for the same investment, ensure manufacturers can work worry-free with unrelated strains, maintain the original cheese taste, plus they are offered in convenient customised packaging formats to support manufacturers’ needs.
DELVO-TEC TS-80 cultures are from the DIRECT-SET(2) range and are Streptococcus thermophilus defined strain blends. A complete range of cultures are included in the DELVO-TEC TS-80 range, all of which have similar acidification profiles. They work by initially producing high levels of acid rapidly. By using these cultures manufacturers can increase production speed while maintaining quality. DELVO-TEC TS-80 cultures are also unrelated to any phage of commercially available strains. As a result, they help tackle the two key issues of Pasta Filata cheese production – speed of acidification and yield – to ensure uninterrupted cheese manufacture.
