DMV launches ultimate cold milk topping base

16/07/08 DMV International is launching an innovative new all-round topping base: Aerion DP 59. Especially developed for applications requiring the addition of cold milk, it is ideal for use in mousses, ice creams or purely as a decoration cream. Already, companies producing for retail markets in Eastern Europe and South America are successfully using this ingredient in their products. Aerion DP 59 is also ideal for use in out-of-home applications.
“In the past, DMV International set the standard with Aerion DP73, the perfect topping for home use. And now I’m proud to be able to present the ultimate improved topping base for this application: AerionDP 59. It is lighter and foamier than its predecessors, and has a natural, full, creamy taste,” says marketing development manager Jos Bevers. “AerionDP 59 is an extremely effective product and delivers a stable, sturdy but still airy foam.”

In some markets, manufacturers are starting to use DP 59 in a modernized version of powdered instant desserts. In France, for example, there is a trend toward more luxurious instant desserts that can be presented to guests as ‘home made’. The cook can add his or her own touches, for example by using fresh fruit, quark, dairy cream or real chocolate. In this way, DMV International anticipates the global trend toward the production of extremely indulgent desserts. The topping base offers the perfect solution for this kind of application.”
Aerion DP 59 works best in combination with milk of around 8 degrees Celsius and can be used with any kind of cold milk or even water. It can be used to create a very rich or even a very low-fat dessert, depending on the other ingredients added. These desserts generally contain far fewer calories and less fat than anything made with regular whipped cream. And a little of this ingredient goes a long way. Even used in only a small amount, it can be relied upon for excellent performance.
