The US-based company specializes in using a fermentation technique to turn wood into SylPro, a yeast single-cell protein that can be used as a replacement for plant protein concentrates or for fishmeal. The commercialization of wood-derived protein for humans would provide manufacturers with another plant-based protein option at a time when consumers are increasingly turning towards more sustainable options.
