07 Feb 2018 --- Norevo’s Confectionery Performers are a professional range of special ingredients for the production of sweets such as sugar-coated, chocolate-coated or compound-coated dragees, gums, jellies, or chewy toffees. Confectionery Performers are used for stabilizing, glazing, whitening and sealing of various types of pan-coated products in which they reduce the risk of spot formation through water or oil migration on the product surface. Felicitas Olltrogge spoke with FoodIngredientsFirst about the company’s new confectionery ingredients.
09 Feb 2015 --- Norevo GmbH launched a new confectionery performer: QUICK WHITE, a whitening agent to replace titanium dioxide in the production of light-colored dragees. This new professional ingredient is a fine, white powder, most precisely a mixture of sugars and natural hydrocolloids, which is applied on dragee centers to stabilize them and provide a white and perfectly smooth surface. Even at low application levels, QUICK WHITE builds up a uniformly white coating layer around the product center, which in turn reinforces the dragee color – either pure white or pastel colors. The natural composition of this whitening agent enhances the crunchy profile of the sugar crust.
