16/06/09 As the Hispanic population in the U.S. continues to grow, so too does the availability of authentic foods and beverages. And in Latin-inspired diets, “culture” doesn’t just mean heritage.
Cultured dairy products such as yogurt and kefir drinks are popular in Hispanic households, and specialty and mainstream manufacturers alike are working to meet burgeoning demand. To help those manufacturers create superior authentic beverages, TIC Gums has developed several specialized gum blends.
One of those blends is TIC Pretested Dairyblend YG HF Drink-2. An all-natural stabilizer, Dairyblend YG HF Drink-2 is designed to bolster drinkable yogurt with added fiber. The synergistic blend of hydrocolloids provides a smooth, creamy texture, according to Dan Grazaitis, TIC Gums food scientist. “The blend adds fiber and mouthfeel to yogurt beverages, while providing a shelf stable product,” he explains, adding that shelf stability is important in this particular market segment.
Another gum blend with a Hispanic influence is TIC Pretested TICorganic Dairyblend KFR LV, comprised of a combination of organic gums and starch. When added to kefir and yogurt drinks, TICorganic Dairyblend KFR LV provides three grams of fiber per serving, in addition to ensuring a full mouthfeel and uniform product throughout the product’s shelf life.
Kefir and drinkable yogurts in traditional Hispanic flavors are gaining new fans beyond the Latino marketplace as well. “Kefir is picking up in popularity because it contains many different types of probiotic organisms,” notes Grazaitis, adding that the unique texture and flavor of such products are also appealing to consumers.
