10/07/08 Wine makers can kick back and relax with the break-through technology of the "FroZen" range of malolactic starter cultures that secures optimum process control through a better understanding and knowledge of the nature of wine making. In addition, producers get quality control, documentation and safety in production.
Chr. Hansen was the first company to supply the global wine industry with easy to use malolactic frozen starter cultures for high quality red wines. Now, the company introduces a new range of frozen starter cultures aimed at white wines such as Chardonnay, Sauvignon Blanc or Pinot Gris.
Time and cost saving

The "FroZen" range can reduce the malolactic fermentation time with as much as 40%. Around 265 million hectoliters wine are produced worldwide (OIV, March 2008), and traditionally 95% of the red wines undergo malolactic fermentation while only 20% of the white wines are currently produced in this way.
Both North and South
“We will first launch in the Northern hemisphere and our "FroZen" range will be used extensively from September in markets like France, Germany, Italy, USA and Spain – and more will follow. When the wine season begins in the Southern hemisphere we will launch there too – and our expectations are high,“ says Laurent Hubert.
The range is also available in a freeze dried version and all come in the convenient DVS (Direct Vat Set) concept for optimum convenience, control and consistency.

The malolactic fermentation process using quality starter cultures ensures a soft and round wine and is very important for making tasty wines. Uncontrolled malolactic fermentations can be unpredictable, risky and time-consuming.
