28 Jul 2015 --- Fresh off the line from the new Cork & Cage series, SweetWater is waxing poetic with The Pit & The Pendulum, a peachy take on Belgian-style brew that flows into bottle shops and top beer joints this week.
The Pit & The Pendulum is a perfect balance of three distinct divergences: Belgian ale yeast, Brettanomyces (a strain of yeast known to impart complexity, funkiness and dryness) and freshly puréed peaches, making for a tasty trifecta. Drink this brew fresh for a more dominant peach flavor, or put it in the cellar to bring out the funk — the Brettanomyces will continue to condition in the bottle, further developing the flavor profile over time.
“It’s the kind of beer I would drink at home,” said Nick Burgoyne, Lead Brewer. Added fellow Lead Brewer Chris Meadows, “This is the type of stuff we hunt for.” The pair, who have been a part of SweetWater’s brewing team for 10 and 7 years, respectably, were given the opportunity to take their knowledge and experience to formulate new recipes for the Cork & Cage Series. “The new Cork & Cage line gives us a chance to dabble in different facets of craft beer. We are in the Lab, coming up with flavors that are fresh and funky, truly new and different,” explained Meadows. Burgoyne continued, “We’re digging throwing our hat in the ring of making American wild ales. The new line is an offering that further establishes SweetWater as a brewery pushing the envelope for craft beer.”
