There has been a huge trend towards consumers who are cutting back on their meat consumption, for health and sustainability reasons, the so-called “flexitarian” is expected to further grow and drive development of new products in the vegetarian category, which is showing strong growth already. These flexible vegetarians can be more discerning than vegetarians or vegans, and want better tasting products that are more reminiscent of meat, further driving innovation in the food sector.
