Smith Dairy Uses Slow Cooking Technique to Craft Its Fat Free Cottage Cheese

13/10/06 Smith Dairy Products Company, the leading regional maker of dairy products, beverages, and ice cream, today announced that it is now using a slow cooking technique to craft its SMITH'S Fat Free Cottage Cheese.
"The slow-cooking method gives the fat free cottage cheese the same flavor, consistency, and quality as our Regular and Lowfat cottage cheeses," said Penny Baker, Marketing Manager for Smith Dairy.

"The quick-set process often produces cottage cheese with a grainier texture and less natural flavor," Baker said. "Our slow-cooking technique assures that the cheese is clean, creamy, and slightly salty, with a mild cultured or buttery flavor."
SMITH'S cottage cheese is rich in protein and a good source of calcium. It makes a healthy snack anytime, but it is especially appropriate as an ingredient in a variety of recipes. "You don't have to just eat a serving of cottage cheese -- you can use it in side dishes, appetizers, main courses, and desserts," said Baker.
