Parmalat Russia and Sympak Strengthen Their Collaboration: Now the Matter is Tvorog!!

21/11/06 After the successfull installation of the UHT milk line carried out at the end of 2005, that is now working two shifts per day, Parmalat Russia and Sympak decided to go through together for a development of a modern tvorog production line, a traditional russian cheese comparable to the most common spreadable cream cheese (quark).
The line will be designed with the modernst concepts of operation flexibility and safety, easy and friendly maintenance, good and automatic cleaning, product losses and manual handling minimisation, final product shelf-life extension.
The equipment will eliminate most of the actual problem concerning the traditional tvorog production lines: microbiological contamination of the product, yeast growth into the production room, manual heavy operation and transfer of the product, bad cleaning and sanification of the components.
The plant will be supplied by Sordi, partner of Sympak and member of the Sympak Dairy Team, and it will be in production within June 2006 at one of the Parmalat dairy production facilities in Russia, named OOO "Urallat" located in Ekaterinburg.
After the thermisation of the milk from pasteurizer for the further fermentation, the equipment will handle the discharge of the coagulum, the separation of the tvorog cheese from the whey by means of the control of final humidity up to buffering for a prompt packing.
The line will also be provided by the possibility to add ingredients to the tvorog prior the thermisation step for a controlled packing temperature.
