Cold processing technology is at the heart of Quest's Citrusense platform for delivering authentic and stable citrus flavours. Citrusense™ flavours are designed to deliver authentic profiles, maximise the sensory impact and respond to consumer taste preferences.
The new specially equipped Citrus Ingredient Development Lab (CIDL) utilizes state-of-the-art cold extraction technology to enable the selective separation of isolates in citrus oils for the development of more authentic and stable citrus ingredients and flavours.
Scott May, Global Product Director – Citrus, says: “In addition to the cold extraction technology, we have also invested in resources required to rigorously test new flavour systems in various applications to facilitate the development process. The new lab will enable us to closely collaborate with beverage customers to develop flavours that will improve consumer acceptance.
“Citrus makes up more than 50% of the beverage flavour market and the CIDL demonstrates how focussed we are on growing the business in this sector.”
Thanks to technology advances under the Citrusense brand, Quest has been able to create flavours that improve the stability, appearance and consumer preference of beverages. The Citrusense range also includes Citrustable a flavour system that is particularly stable and delivers extended shelf life, enabling the creation of lemon and lime flavours that are more stable than ever before, which is critical to the beverage industry.
Citrusense has been launched across North America, Europe and in the Asia-Pacific region.
