18/04/07 PURAC will launch a new developed potassium lactate, PURASAL P PLUS, during this year’s IFFA exhibition, May 5 – 10, 2007. This product of a higher purity is more concentrated and will help the industry to meet the focus on sodium reduction. Its effect on shelf life and food safety will be supported by a predictive model, which will be explained during the exhibition. Furthermore, a range of easy to use PURASAL POWDERS will be promoted.
PURAC is known for its range of products that contribute to safe stable meat products. Its lactate salts are branded as PURASAL and have proven to be effective on safe shelf life extension. Shelf life can be prolonged with 30% to 100%. PURASAL also has been tested on a range of pathogens including Listeria monocytogenes, Clostridium botulinum and E. coli 0157:H7 and thus increasing the safety of meat and poultry products. The lactate salts are used in a wide spectrum of different applications, a.o. cooked emulsified, cooked single muscle products, fresh marinated, minced meat products and dry cured products.
