IFF Introduces Authentic Natural Beef Flavors

While the new beef flavor introduction is global in scope, the flavor profiles have been localized to the taste preferences in different regions. In Europe, the flavor profiles include Rare, Marrow Bone, Boiled, Roast, Grilled, and Stewed Beef.

24/06/09 International Flavors & Fragrances Inc. has introduced a new range of authentic, natural beef flavors based on culinary benchmarks created by its international team of research chefs.

Following the approach that led to a highly successful line of natural chicken flavors last year, the IFF Savory team used a cross-functionally integrated process to create a new range of beef flavors. Jos Muilwijk, Global Category Director – Savory told FoodIngredientsFirst , “The demand for cleaner labels on food products will continue, despite the economic challenges. Even now, in markets with severe retail pressure on prices, our research shows that Natural flavors are still in high demand, both for premium and value brands."

"IFF is very confident that our superior quality in Natural Chicken and Beef flavors will allow food manufacturers to keep on differentiating with added taste value.  Additionally, given the importance of clean labeling, we fully believe that the end of the recession will bring with it an even greater demand for naturals.  The wise company will be building their portfolios now to be ready for that moment when demand increases," Muilwijk added.

For the new line, Marketing and Sensory & Consumer Insights teams analyzed consumer preferences, needs, cooking traditions, and consumption habits. The Culinary team established gold-standard benchmarks via the company’s CulinEssence approach to guide the flavor creation while the Sensory team characterized target flavor profiles. Using the new consumer input and analysis, R&D developed proprietary flavoring ingredients used by the Flavorists to create the authentic flavor profiles. Sensory and Culinary teams then used trained panels around the world to validate the new creations and deliver against the culinary benchmarks.

The international team of CulinEssence chefs went to great lengths to ensure they created the truest benchmarks of the best-loved beef profiles. “While we could have used more gourmet cuts of beef prepared in exotic ways such as sous-vide, we would have missed those crucial authentic and familiar notes that consumers crave,” said Certified Master Chef Florian Webhofer. “To deliver these notes we have applied a combination of culinary science and creativity.”

While the new beef flavor introduction is global in scope, the flavor profiles have been localized to the taste preferences in different regions. , “In Europe, the flavor profiles include Rare, Marrow Bone, Boiled, Roast, Grilled, and Stewed Beef. The collection satisfies consumer demands for authenticity,” Muilwijk continued.

According to Teresa Supnet-Rosa, North American Category Marketing Director, “Our research showed that North American consumers most liked the comforting, nostalgic, home-cooked qualities associated with grilled, roasted and braised flavor profiles, so these form the basis of our offerings for the region.” Supnet-Rosa noted that the new flavor range is based on traditional preparation and cooking methods and is MSG-free, HVP-free, and allergen-free.

The new range is perfectly suitable for use in bouillon, soups, gravies, marinades and noodles.

IFF’s CulinEssence program is a creative combination of cutting-edge flavor technology and global culinary arts. The international team is led by Master Chef Florian Webhofer. The chefs work in concert with flavor creation and flavor technology to create profiles that result in consumer delight in every part of the world.
