19 Jun 2012 --- Makers of high-lipid food emulsions such as mayonnaise and dressings for the European market now have a highly effective way to enhance the freshness and flavour of their products while addressing the demand for natural foods at the same time. Now with the introduction of GUARDIAN CHELOX L (EU), DuPont Nutrition & Health supplies the European food industry with a viable natural alternative.
Following the well-received February launch of GUARDIAN CHELOX L in North America, DuPont now introduces GUARDIAN CHELOX L (EU), which is tailored for the European market. Both combine natural antioxidants and natural chamomile flavouring in a very special, synergistic blend that enhances and stabilises the freshness and flavour of foods containing oils and fats, while maintaining a clean label.
“Historically, manufacturers have looked to synthetic ingredients such as EDTA for metal chelation and to BHA and BHT for free radical-scavenging activity,” said Paul McKey, EUROW regional product manager - Protective Antimicrobials & Antioxidants. “But now DuPont offers a natural alternative in a single solution that provides manufacturers with the functionality of both those types of ingredients.”
Offering the same excellent performance as the North American product, GUARDIAN CHELOX L (EU) differs only in that it contains a selected rosemary extract that satisfies specific regulations for this ingredient in the EU. The suffix ‘(EU)’ has been added to the name simply to distinguish it from the North American product and GUARDIAN CHELOX L (EU) meets food regulations not only within the EU but throughout greater Europe.
GUARDIAN CHELOX L (EU) has been successfully tested in mayonnaise, dressings, margarine and spreads as a value-adding, natural alternative to EDTA and other synthetic antioxidants. It also can be used in other food products where rosemary extract is approved for use.
Internal testings on samples of 40 percent fat ranch dressing stored at 25°C compared the performance of GUARDIAN CHELOX L (EU) against that of EDTA and a control sample containing no antioxidants. Measuring hexanal (a by-product of lipid oxidation) content over a 12-month period, test results showed antioxidant protection in the samples containing GUARDIAN CHELOX L (EU) similar to that seen in the EDTA sample.
